Choy was born and raised in Oahu, Hawaii. She is currently a student at the University of Hawaii at Manoa located in Honolulu, Hawaii where she is studying communications.
Choy started her pageant career after a family member encouraged her to enter, telling Choy it would be a good experience and she could make new friends.
With this encouragement, Choy entered the 2018 Miss Waikiki, Honolulu and Oahu USA and Teen USA pageants. While many state franchises within the Miss USA Organization have contestants register at-large to directly compete for the state title, Miss Hawaii USA and Teen USA also offer a small number of local preliminary competitions that give contestants another route to advance to the state pageant.
In her first pageant ever, Choy was crowned Miss Waikiki USA 2018 on July 1, 2018. In addition to the title, Choy was awarded a $10,000 scholarship to Argosy University.
Choy went on to compete at the 2019 Miss Hawaii USA and Teen USA pageant. She competed against 24 other contestants in only her second pageant. On November 18, 2018, Choy was crowned Miss Hawaii USA 2019 at the Hawaii Convention Center located in Honolulu, Hawaii. She also won the Best in Evening Gown, Best in Swimsuit, Most Photogenic and Popularity awards.
Choy will go on to compete for the title of Miss USA 2019.
